CA8. 368 Creating the Menu
Students are expected to create a menu and support documentation for a restaurant or other food operation using the skills and concepts presented in this class. Throughout the term students will work on components of the final project.
Prerequisite
CA 103 Menu Development & Tournant Cooking with a grade of C or better.

Outcomes
Upon successful completion of this course, students will be able to:
Create a menu as it relates to specific restaurant themes and concepts. Create a restaurant project that demonstrates knowledge to create a mission statement, fact sheet, costings, weighted food cost, and marketing strategies. Demonstrate knowledge of a brand image and pricing strategies.
